Chicken Tortilla Casserole

One of our Mom’s classic and simple recipes.  We love this and the kids will too!  Four simple ingredients, that’s all it takes!

2 Chicken Breasts, cooked and shredded (Boiled or you can use left over chicken)

12-15 Corn Tortillas

1 Large Can of Las Palmas Medium Green Enchilada Sauce

2 C Mild Cheddar Cheese  (Plus or minus.  It is layered so just be sure to shred enough to coat when it’s time for the cheese layer.)

 

*Pre-heat oven to 375°.  Spray a casserole dish with PAM.

*Add a little bit of sauce to the bottom of the pan to add moisture.

*Tear the tortillas into 7-8 pieces and make a layer.

*Add shredded chicken.

*Add some sauce.

*Add cheese.

*Repeat layering steps.  Ending with sauce and cheese on top.

*Bake uncovered for 40 minutes until bubbly.

If you like hot sauce, such as Tapatio, add a little to your plate before eating.
